This is one of our favorite appetizers for summer or warm climates. It’s easy to make and bring to a friends house or have at home. I’ve modified this depending on my mood — sometimes it’s a watermelon sandwich with a watermelon piece on top and bottom, otherwise it’s just the bottom watermelon piece (with goat cheese and mint). Adjust as you see fit and let me know how you like it!

Watermelon Goat Cheese and Mint
Watermelon Goat Cheese and Mint sandwiches are the perfect easy summer appetizer
Equipment
- 1 Knife
- 20 Toothpicks
- 1 Serving plate
Ingredients
- 1 Whole Watermelon Small watermelons are enough
- 1 1 Log Goat cheese
- 1 Bunch Mint removed from stems
- 1 Tbs Honey
- 1 Tbs Lemon
Instructions
- Slice the watermelon into 1/2" slices so you have discs of watermelon
- Take the mint without stems and slice thinly
- Take two discs of watermelon, place on top of each other, and slice the rounded edges off
- Slice the remaining parts into 1" x 1" squares
- Repeat with the remaining watermelon discs
- Take the cold goat cheese and place a dollop onto one piece of watermelon, smoosh it into a thin and even layer
- Place watermelon slice on top (making a goat cheese sandwich)
- Place a dab of honey and a spritz of lemon on top
- Sprinkle with mint on top
- Place toothpick in
- Repeat with remaining watermelon
